for each class...
Spy is a bit subjective, mostly depends on your play style. My personal fav is
Ambassador
Dead Ringer
Knife

But most of you know that. As a pyro I think it is
Backburner
Shotgun
Homewrecker

and I rarely use that setup actually.

Demo I'd say is vanilla... although I use the pan, which is basically the same as bottle.

Well medic all his stuff is situational... mainly cause you rely on your team. (no matter how bad they are.)

But... I used

Overdose
Medigun
Amputator

before my strange weapons.
You got speed to get away, which really makes a difference if you are an evasive non-aggressive medic like me.
AOE heal for the nearly dead group of people.

I see a lot of really good medics use Crossbow and Ubersaw.
I am a bad shot even with sniper so I just stick with my needle spam.

Battle medic load out, which is quite effective imo, is Blut, Quickfix, and the Bust.
Good aim and dodging with blut makes a medic very scary even to some moderate players.
Quick fix allows you to get low allies up fast, and lock on to one if you are going to die and use the uber to save yourself.
Bust you can pick out the weak ones to needle down easier.
I don't battle medic here but I do on the servers that are full of crappy/tryhard players.

Can't go wrong with just vanilla though, dispite what folks say about the bonesaw, I like not having a crutch... and most of medic's melees are just that... crutches... different types... but still.
My thoughts:
Bonesaw - My favorite weapon ever next to my medigun.
Ubersaw - Hit gets you uber... ehh, I rather heal thanks.... and can someone say SLOW?
Vitasaw - I shouldn't be dying in the 1st place.
Bust - I don't care what thier hp is, I just wanna get away.
Amputator- Bonesaw with a spiffy taunt. I like this one.

Syringe Gun - I used this back when all medics used blut before the epic nurf to it... mainly cause people didn't expect me to crit. >:)
Blut - Useful in a pinch, but useless vs moderate or higher skilled players. I would rather have the regain and just get the fuck out.
Overdose - IMO just as good as Syringe Gun, the speed boost is very nice... but it should apply weather or not I have it out or not... cause you can drop your uber switching weapons.
Crossbow - Very effective to medics that are good shots (which I am not) and can keep thier team alive very easily... just won't get uber doing it... and to me thats a huge draw back... and the fact I can't aim it. If I have a good team I go for the medic set bonus and have that extra hp regain... it will save you A LOT.

Medigun - Can't go wrong with invul... unless the opposing team is full of pyros.
Krits - Very effective when used with a moderate to high skilled player, but you have to dodge like hell... and makes me feel dirty.
Quickfix - Say what you will about quickfix... but I think it is also is a very effective medigun and uber if used correctly. But most of the time Medigun will be a better choice, unless your team is backed in a corner.

Well thats my thoughts on medic.

Well medic for me I tend to use:
Overdose- I like it just cause it makes me run faster :(
Kritz- I feel like I can help my team get more kills, (like guy said) when used with a good player it can be super effective.
Ubersaw- I love using this to get a few melees on a spy to build up an uber.

As a soldier
I like stock rocket lawn-chair
Buff banner, mini crits do help when pushing.
And equilizer.

And as a sniper, Since I am horrible at aim
I use huntsman, (mainly cause of the horribly big hitboxes)
Jarate- fun to throw at spys, especially dopple XD
and Bushwaka (goes very well with the jarate)

Uber - build ubers

Solider- BlackBox(cause the heals are far to useful for me)/shotgun/Equal
Demo- Sticky/Pipe/Pan
Heavy- Tomi(after nerf maybe not)/Sandvich/GRU
Pryo- Degreaser/Shotgun/Postal or Rape Rake
Medic- Blutsauger/Kritz or Medi depending on factors/Ubersaw
Sniper-Mach/Jarate/Bush usually unless want to piss people off with piss-set or Hunts.
Spy- Enforcer/Deadringer/Knife or Ambassador/C&D/Knife depends on enemy team.
Eng- Shotgun/Wrangler/Jag

For the Scout, I usually use the Stock Scattergun/Bonk/Sandman, but I don't play him that often anyway.

For the Soldier, I use the Black Box/Shotgun/Equalizer or Disciplinary action.

For the Pyro. Backburner/shotgun or detonator/Axtinguisher or Homewrecker.

For the Demoman, Loch-n-load/Chargin' Targe or Sticky's/Frying Pan.

For the Heavy, Iron Curtain/Sandvich/G.R.U.

For The Engineer, Shotgun/wrangler or Lugermorgh/Jag or Gunslinger.

For the Medic, Blutsauger/Kritzkrieg or Stock Medigun/Ubersaw.

For The Sniper, Machina or Huntsman/Jarate/Bushwacka.

For the Spy, Ambassador or Enforcer/C.a.D or Dead Ringer/Knife or Kunai.

black box/ useful for getting heals when you dont have a medic, and i only need three shots
shotgun
equalizer

demo
vanilla set up is best :P

sniper
vanilla sniper rifle
jarate/ only because i dont get backstabbed to often
bushwaka/ awesome combo with the jarate

spy
ambassitor/ only to take out razorback snipers
vanilla for everything else

engi
jag, i dont need to kill no one with mah wrench
wrangler, because bitches trying to take our my sentry from afar
vanilla everything else

and those are the only classes i play

Scoot: I tend to use Scatter, Sandman, and pistol. Note I suck at scout.

Pyro: Degreaser, Shotty/flare, Maul/Pummeler.

Solly: Vanilla rocket, shotty/Bison for fun, and Equalizer before the Disciplinary Action came along.

Medic: Uh I like the crossbow, Medigun, and the Amputator because of the health thing.

I don't like heavy much and I personally don't like the Tomislav. If you're going Heavy v. Heavy with any other gun you're going to get raped. But I Minigun, shotty/sandvich/business, and some random fists.

I'm only good at combat engineering, so I gunsling, shotgun, and pistol.

Spy: Knife/Kunai, Enforcer/Ambassador, Dead Ringer/Vanilla watch.
Note that I suck, so none of this is too effective.

so people appear to think that their preferred loadouts are the best? but it is interesting to see what people use. On that same note, I do think the enforcer is the best spy revolver, but I'm too prideful to use it due to the amount of time I've spent trying to get headshots with the ambassador.

i used to like the enforcer, but the time to cloak, just a half second is to much for me, the quicker i can cloak, the better. i usually dont rely on my revolver, i only use it on snipers with razorbacks

scout: scatter/pistol/atom
soldier: black box/shotty/eq
pyro: degreaser/flaregun/postal
demo: sticky/loch/caber
heavy: vanilla
engie: shotty/pistol/gunslinger
medic: bluts/[medigun/kritz]/ubersaw
sniper: machina/jar/bush
spy: enforcer/knife/deadringer (never play)

Scout- Scattergun/Pistol/luger/Atom - pistol is better cause of smaller viewmodel, if disabled doesn't matter
Solider- Vanilla + eq
Pryo- Degreaser/Flare/Posta
Demo- Sticky/Pipe/Pain train even on Defense cause thats how i roll
Heavy- Normal Minigun/Sandvich/GRU
Eng- Shotgun/Wrangler/gunslinger/normal wrench depending on map
Medic- Needle Kritz or Medi depending on factors/Ubersaw if medi, vita if kritz
Sniper-Mach/Jarate/Bush usually unless want to piss people off with piss-set or Hunts.
Spy- Ambassador/Vanilla watch/Knife

Spy: Ambassador/Butterfly Knife/Dead Ringer

I don't use most of these sets because a lot of people use them. There are a lot of options, why use the same try-hard setup every time?
