What to do with 10 lbs of carrots...

So... the lady friend and I went to Costco the other day, and she has been wanting to eat healthier and healthier. We enter the produce cooler and she's like, "We should get some carrots!" We look around, and the only carrots they have were these GIANT 10 lb (4.54 kg) bags. So we say fuck it and grab the bag.

Only when we got home did we realize how much 10 lbs of carrots is. So now I need ideas for what to do with them. I've had carrot cake suggested, but I feel that defeats the purpose of getting carrots for a healthier diet (not that I'm against it, just seems counter productive). They are swell in salads and chicken noodle soup, but that's all I can think of at the minute!

So lemme hear them suggestions/recipes!

Carrots last a fairly long time, but carrot cake is the only thing I know that uses pounds and pounds of them at once. Carrots are good in lots of dishes like meat pies, stir fries, bibimbap, and probably others. I don't know what kind of things you usually eat, but there are plenty of good meals to throw carrots into.

Yeah, we're going to have to look up a recipe for shepherds pie or some pot pie (chicken or beef) because thems is tasty eats.

Also yes Failhorse, Costco is pretty amazing. But the customers are INFURIATING there... We just moved to Jersey and the traffic flows at 3x10^8 m/s, but when people are in a store, they change and suddenly CANNOT navigate a shopping cart through an aisle that's fifteen goddamn feet wide... FFFFFFFFFF it insights so much rage on my behalf.

No kidding. For the longest time the only Costco near me was in this gentrified crap hole. Every motherfucker has a BMW or Land Rover speeding along the parking lot. The second they're in the store they lose any navigation abilities. After the 3rd trip we decided it was safer to leave the kids at my parents before we go.

We did the carrot thing before. Luckily they keep forever in the fridge. Lots of chicken soup. We'd give 1 to the dog every day as a treat. But it took 3 weeks to go through them all.

Preheat to 350 degrees, add 3-4 tbsp of butter in the bottom of a baking dish. Add carrots, make sure they stay in a single layer. Cover dish with aluminum foil. Bake for 30 minutes.
Take them out. You're not done. Add salt and toss in the pan. Cook uncovered for another 25-35 minutes until they look tasty as fuck. Take them out and put another 2 tbsp of butter on, fresh black pepper and wait for them to cool a little. Eat them.

Sautéing them would be nom nom. We do that with veggies a lot at work. What you want to do is get a big flat pot and add some olive oil in. Let it set there for a min then add in the veggies. You can add whatever spices you think would work well. For Carrots I suggest ginger or brown sugar and salt n pepper for carrots alone. You can always add other veggies if you want, onions and potatoes are always good imo. Matter of fact heres a good one

i truthfully hate carrots. i dont know why but they are just so bland. all i do is drink oj and eat the various deli food i have at work, i work so often that my parents no longer feed me dinner to often. also they are expensive up here

i have actually had that before, here in my town we dont do much hunting (we fish a lot and get some really good tasting salmon and halibut) but i went to the far north for an exchange once and we had that and it was very good.

So, I've seen this around a few places, and cannot seem to find the main article which brought it to my attention... But duck mentioned OJ, and apparently most OJ is stored for many months before it ever reaches a consumer: http://www.bewellbuzz.com/general/truth ... nge-juice/

Store OJ is death in a bottle. The same companies that make perfume create the "flavor packs" for that shit.

I made this for my family a few times. It was divine..
Recipe could use some lemon juice and a pinch of basil (I also have demi-glace on the side for taste)

Otherwise, I'd suggest a carrot soup

I've never had tempura that contained carrots. Most of what I get are shrimp, potatoes, onions, broccoli, eggplant and Korean pumpkin (at this one Asian fusion restaurant in my hometown).
