Besides Pulp Fiction (and anything else Tarantino has done), I've loved Mel Brooks' movies as well as most of Hitchcock's stuff.

Wall-e is about the possible ramifications of our wasteful lifestyle, Up is about letting go of someone you once loved, and Toy Story 3 is about Death, the finality of life, and growing up. I won't lie, I cried in the ending of TS3 and in the married scene in Up. I hardly ever do that with a film, but both of those scenes just really hit me hard. Plus, Pixar never made a bad films, which alot of directors/film studios can't say.
